Spicy chicken wings, as we know today, have their roots in the United States, specifically in Buffalo, New York in the 1960s. The history is associated with the Anchor Bar Restaurant, where the owner Teressa Bellissimo has been credited with creating such a well-known delicacy. It all happened exactly in 1964.
According to several theories, Teressa had a surplus of chicken wings in stock that had not been used within the preparation of other dishes that day. To avoid unnecessary food waste, Teressa decided to fry these wings, coat them in sauce and simply start serving them with vegetables as well as the dressing. After being first served at her Anchor Bar Restaurant, chicken wings immediately became a famous dish in Buffalo.
Their popularity was gradually growing beyond the city of Buffalo. With the increasing awareness of chicken wings, different varieties of sauces and side dishes have emerged. Therefore, chicken wings are known today in various styles, for instance the classic buffalo wings, BBQ wings, teriyaki wings and many others.
Chicken wings themselves have also spread to other countries and cultures outside of US and after some time, they got adapted to specific local tastes and preferences. Ingredients
- 1 kg of chicken wings (16 pcs),
- 2 tsp of baking powder,
- Salt,
- Ground pepper,
- 60 g of butter,
- 1 tbsp of sugar / honey (based on the preference),
- 2 cloves of garlic,
- 150 g of tomato puree,
- 1 tbsp of spicy sauce (e.g. Sriracha)
Preparation of spicy chicken wings
1Wash chosen chicken wings, dry them and put them in a bowl. Season with salt, pepper and sprinkle with powder for pastry. Mix well with your clean hands. If you like, you can use the baking powder which will make the skin extra crispy. After that, preheat the oven to 190 degrees.
2Arrange the prepared wings on the grill. We can line the sheet with the aluminium foil. Bake the wings for 25 minutes, then remove the baking sheet and turn the wings. Bake for another 25 minutes.
3In the meantime, we can prepare a simple and quick sauce for the wings. Melt 40 g of butter in a saucepan (reserve the remaining 20 g for the final softening). Add sugar and garlic. Then mix them all together.

Add tomato puree and your chosen hot sauce (e.g. Sriracha). Let it boil gently for about 5 minutes. If needed add salt as well. It all depends on your preference.

After frying the wings on their other side, take them out and rub them on one side with the sauce. Return to the oven for 5 minutes and bake. You can increase the temperature to 220 degrees.

Remove the baking sheet again, turn the wings over, brush with the rest of the sauce and bake for another 5-10 minutes. It depends on how well you want the wings to be cooked.
