- 2 tablespoons of butter,
- 2 medium-sized potatoes,
- 1.5 litre of chicken / vegetable broth,
Seasoning:
- Ground red pepper,
- Ground black pepper,
- Whole cumin,
- Vegetables (optional and based on your preference),
- Salt,
Soup insert:
- Grated cheese,
- Toasted baguette (croutons, fried peas),
- Herbs (parsley, chives)
Preparation of the aromatic garlic soup using 8 cloves

Start with preparing the garlic. Peel and crush the mentioned 8 cloves (or more or less, depends fully on you). Then let the cloves stand for a while in order to release their flavour and nutrients.

Continue with washing and grating the potatoes like apples (see the picture). If you prefer, you may also cut them into cubes. Potatoes are used in the garlic soup to thicken it but if you only want the garlic broth, simply omit the potatoes completely.

Next, heat the butter and add the garlic. Roast it, so that it starts to smell strongly but be careful not to burn it. Then add the prepared potatoes. Mix altogether and eventually sprinkle with red pepper, cumin and pepper. Fry it all a little.

Lastly, cover everything with the broth of your preference. Cook until completely soft and season again if it is needed. Then fry the pastry in the olive oil. Once done, the soup is traditionally served hot with grated cheese, fried pastry, herbs and possibly green onions on top as a nice decoration.
