Simple chicken curry with pineapple

Ingredients
- 2 pieces of chicken breasts,
- 1 red onion,
- 2 garlic cloves,
- 1 tsp (tea spoon) of ground / hot red pepper,
- ½ tsp of ground black pepper,
- Salt,
- 2 tsp of curry spices,
- ½ can of pineapple compote (sliced),
- 1 can of coconut milk (300 ml),
- 2 tbsp (table spoons) of oil (coconut, canola, olive,…)
Simple preparation of pineapple chicken curry
1Firstly, clean and dice the chicken breasts. Peel the onion and the garlic and chop them finely. Don’t forget to prepare the spices as well as the sliced pineapple compote.
2Slowly toast the onion in the oil. When it gets glassy enough, add the garlic to it and fry it for a short time.
3After that, add the chicken breasts, stir and season with black pepper, salt, ground paprika and curry spices.
4When the meat is almost ready, add half of the pineapple compote and 4-5 table spoons of its juice. Stir and if according to your preferences, add the coconut milk as well as water to dilute the sauce.
5Let it all cook together on medium power for approximately 15-20 minutes. Once ready, the dish can be perfectly served with rice. However, the choice primarily depends on your current cravings!
