Why should you make zucchini fritters?
Ingredients
- 2 medium-sized zucchini (around 500-600 g),
- 1 medium-sized potato,
- 1 egg,
- 2 cloves of garlic,
- 170 g of cheese (type depends on your preference),
- Salt,
- Ground black pepper,
- 2 tbsp of dried marjoram,
- 4-6 PL of plain flour,
- Oil
Preparation of the zucchini fritters

Let’s start with washing the zucchini and peeling the potato as well as the garlic.

Take 1 zucchini (or half of it) and grate it together with the potato. Place them in a strainer and add salt. Then leave for 3-5 minutes and release the juice.

In the meantime, finely grate the cheese into a large bowl. Add spices, salt, pressed garlic and eggs. After that, stir.

Transfer the mixture from the strainer to the bowl with the cheese and the egg. Carefully squeeze out as much water as possible from the grated zucchini and potato. Then grate the second zucchini. Add salt again and let the juice get released. Squeeze it all properly and add to the dough.

Next, add flour to the ingredients. The amount you use is individual, depending on how much water you were able to squeeze out of the zucchini. However, 4-6 tablespoons should be enough. The dough must eventually be wet and juicy.

Then heat up the pan. It is up to you whether you want smaller fritters with less oil used or large pancakes with the diameter of the pan. For small pancakes, 1 tablespoon of oil per large pan is enough. Fritters can be turned well to the other side and will eventually not fall apart.

For a larger pancake, it is better to use a layer of oil (0.3-0.5 cm). Put the dough to the centre of the pan (see the picture below) and press it with a ladle or a rolling pin to a thickness of about 0.5 cm. It will be properly fried and crispy. Also, there is no risk of it falling apart when turning to the other side.
